    Plan The Perfect Plant-Based Picnic With These Recipe Ideas

    Summer’s here! Along with, unfortunately, a pandemic that just doesn’t seem to want to go away. That means we’ll all be spending a lot of time outdoors this season, so why not try a picnic? Picnics don’t have to be dull, but they don’t have to be difficult either. And guess what? They can be completely-plant based and delicious at the same time! We’ve tried and tested a couple of easy, vegan recipe ideas for you to try on your next plant-based picnic.

    Classy cucumber sandwiches

    These super simple sarmies are easy to make, and guaranteed to please even picky eaters! They turn often dismal attempts at a picnic ( i.e. a store-bought dip and a packet of Doritos) into a slightly more elegant affair with very little effort!

    What you’ll need:

    • Fresh white or wholewheat bread.
    • Thinly sliced cucumber.
    • Your favourite vegan mayonnaise.
    • Fresh dill and mint.

    Chop up a bunch of fresh dill and a few mint leaves finely, and mix them into as much mayo as you think you’ll require. check for taste and add salt and pepper if desired.

    Lay out as many slices of your bread as you’ll need and spread your herb-mayo mix over all of them. Then lay out your cucumber on top of half, and place the other half over to form neat sandwiches.

    Use a sharp knife to cut off the crusts and cut the sandwiches into triangles. Serve immediately with extra herbs to garnish.

    Vegan picnic scones

    Banana-Currant scones

    These vegan-friendly scones are more moist than traditional ones, and come with the added bonus of tasting like a scrumptious banana bread hybrid. They go well with jam or your choice of vegan cheese, but are perfectly delish just on their own. Best eaten on the day they were baked!

    What you’ll need:

    • 2 over-ripe bananas
    • 3/4 cup non-dairy milk
    • 1 teaspoon vanilla essence
    • 3 cups all-purpose flour
    • 2 Tbsp baking powder
    • 1/2 teaspoon salt
    • 1/2 cup sugar
    • 1/2 cup chilled coconut oil.
    • 1/2 cup currants ( less or more as desired)
    • brown sugar for sprinkling

    Pre-heat your oven to a toasty 200 degrees celsius, and line a large basic sheet with baking paper.

    Mash your banana in a small bowl, until as smooth as possible. Then mix in the milk and vanilla.

    In another large bowl, sift together the flour and baking powder, and then add in the sugar and salt.

    Add your coconut oil in small chunks to the flour (as you would with butter in traditional baking). You need your coconut oil to have been chilled enough, so that it’s not a liquid. Cut it into the flour until your mixture looks like course bread crumbs

    Add your banana milk mixture and currants, and knead everything together to form a stiff mixture, but be careful not to over mix!

    Scoop your batter onto the baking sheet to form about 12 scones using a 1/2-cup measure, and sprinkle lightly with the brown sugar.

    Bake for about 18 minutes, or until the bottoms are a nice golden colour, and then remove from the oven and place on a cooling rack to cool off completely.

    Perfect pita bread

    This simple bread from BBC Good Food is great for any occasion, and goes perfectly with the spread and dip below! You don’t need a picnic to try it out either! They’re a great snack to whip out at any event.

    What you’ll need:

    • 2 tsp instant dried yeast
    • 500g white bread flour and extra for dusting
    • 2 tsp salt
    • 1 tbsp olive oil

    Mix your yeast with 300ml of warm (not hot) water in a bowl and allow to sit for 5 minutes or until it gets super bubbly. Then mix it together with the flour, salt and olive oil to form a soft dough.

    Knead the dough on a floured surface for 5-10 minutes (try not to add too much more flour) until it’s smooth. Place the kneaded dough in a covered bowl for about an hour, or until it’s doubled in size.

    Heat your oven up to the max – about 250 celsius, or 230 if you’re using a thermo fan oven – and place a large baking tray inside to heat up.

    Divide your dough into 8 balls, flatten each one and roll them into ovals on a floured surface, about 3-5 mm thick. They should be pretty large.

    Remove your hot tray from the oven carefully, dust with flour, and place the pitas on it. return it to the oven quickly, and bake for 4-5 minutes or until your pitas have puffed up and look golden and delicious.

    Wrap each hot pita in a clean tea towel once you’ve removed them from the oven to keep them hot and soft while you finish baking the rest.

    Heavenly hummus

    This quick and easy hummus recipe is so tasty you’ll struggle to stay away from it. It’s an essential when it comes to plant-based picnic ideas, as it’s great for spreading generously over your pita, or for adding to salads and sandwiches.

    What you’ll need:

    • 2 cans of chick peas in brine (drained with some of the brine reserved)
    • 1/3 cup chickpea brine
    • 1/2 cup tahini
    • 1/4 cup olive oil
    • Juice of a whole lemon
    • 2 garlic cloves
    • 1 tsp cumin
    • 1/2 tsp salt

    Add all your ingredients to a food processor and blend until smooth and creamy. If necessary, you can add more of your reserved brine, or just some water if you’ve thrown the rest out, to get a softer result.

    It couldn’t be easier than that!

    Taste test to see if you want more salt or lemon juice, and transfer to a bowl or plate for serving.

    Garnish with olive oil, paprika and fresh parsley.

    Multi-purpose tofu dip

    This creamy dip is another of our favourite plant-based picnic ideas, because it can so easily be used for anything! dip chips or crackers into it, spread it on bread, or dunk in cherry tomatoes and celery sticks. It’s a great alternative to cream cheese in just about any recipe.

    What you’ll need:

    • 2 blocks of soft tofu*
    • 2 cloves of garlic
    • lemon juice (to taste)
    • 2 tablespoons nutritional yeast flakes
    • salt and pepper to taste

    *You can get these at your local Chinese supermarket. Ask for the fresh tofu!

    As with the hummus, add all your ingredients to a food processor and blend until smooth and creamy.

    You can take some creative liberties here, and add more or less lemon juice, garlic, and nutritional yeast to suit your preference.

    season with salt and freshly ground black pepper to perfect it!

    Along with the recipes above, we recommend taking some fruit skewers and vegetables like cucumber and carrot slices, celery sticks and cherry tomatoes. And don’t forget beverages, napkins and a picnic blanket to make the situation more comfortable!
